EXOTIC TABLE: GOA December 12, 2011 | This episode of Exotic Table is all about my trip to Goa – a visit to a spice farm, learning about Hindu Goan and Catholic / Portuguese Goan culinary traditions, and, of course, a dish I prepare that’s inspired by the trip.
EXOTIC TABLE: TURKEY November 14, 2011 | Take a look at scenes from a recent culinary trip I took to Turkey. I explored Cappadocia, Bodrum and Istanbul and learned to cook Turkish cuisine from both chefs and cooks (and did a bit of teaching myself at the Istanbul Culinary Institute). In a town called Mustafapasa, which was an old Greek settlement, I learned the high art of baklava. Here, I take what I learned from the ladies and show you the fastest baklava recipe ever.
EXOTIC TABLE: TORTILLERIA NIXTAMAL October 3, 2011| This episode of Exotic Table takes me to an authentic tortilleria in Queens, Tortilleria Nixtamal, where I learn the art of making corn tortillas and some delicious Mexican dishes. After, I recreate one of the dishes I learned as a simple and beautiful, farm stand corn and mushroom tortilla salad.
EXOTIC TABLE: ENOTECA MARIA August 15, 2011 | Here’s the second webisode of my series Exotic Table. In it, I take a trip to an Italian restaurant in Staten Island where grandmas are chefs and create the daily menu based on specialties from their particular region of Italy. I learn a beautiful porcini mushroom pasta dish from Rosa Turano, a grandma from Vicenza. After, I recreate the dish as Porcini Macaroni Pie for a ladies lunch. Enjoy!
EXOTIC TABLE: NEW ORLEANS Hi everyone– Today, I’m premiering the first webisode in a series called Exotic Table. Much how I am inspired as a chef, the series focuses on different travel or food destinations that have a rich cultural history, touches on key flavors, dishes and ingredients and finishes up with showing you how to bring those inspirations into your home kitchen. This episode starts in New Orleans, a serious cultural food destination, and demos a recipe that came out of that experience. It was such an incredible time, and I hope that that translates equally for you guys!
